Beef Biryani


The name 'Biryani' from the Persian word beryā(n) (بریان) which means "fried" or "roasted". Biryani was originated inIran (Persia) and it was brought to South Asia by Iranian travelers and merchants. Local variants of this dish are not only popular in South Asia but also in Arabia and within various South Asian communities in Western countries. (Wiki)

So lets take a ride to Persia by cooking our Beef Biryani...

Ingredients :

*1kg Basmati Rice
*1 kg onions
*1 cup oil Whole Garam Masala (cloves jus 2 or 3)
*3 – 4 Big Tomatoes (finely chopped)
*1 tsp Turmeric powder,
*1 tsp red chilli powder,
*1 tsp cummin powder,
*1 tsp coriander powder,
*1 tsp garam masala powder

For Marination (Previous Night)

*1 kg Beef (chopped squarely)
*Curd 300 grms
*Ginger Garlic Paste
*Salt

For Garnish:

Birista : Fry ½ kg onions (finely chopped)
1 halved Lime
1 sprig Mint Leaves

Method:

Step 1 : Boil the rice till its half cooked

Step 2 :
Heat oil in a cooker and fry whole garam masala, fry the remaining ½ kg onions (finely chopped) till soft, then add chopped tomatoes, once tender add turmeric powder, redchilli powder, cummin powder, coriander powder and garam masala powder and fry till the oil comes up.

Step 3 : Later add marinated beef into it and again fry it till the oil comes up, and take 8 whistles.

Step 4 : Take deep vessel, coat it with ghee, put 1 layer of the beef masala, and Birista on top of it and then 1 layer of half cooked rice. Repeat the procedure.. Once done, add remaining barista on top.

Step 5 : Sprinkle a little ghee and add color on top.
