Chicken Sukka
1 ½ kg Chicken
2 tbsp ginger garlic paste
1 lime (squeezed)
1 tsp turmeric powder
3 tbsp Ghee
8 sprigs Curry leaves
4 big Onions (chopped)
3 big tomatoes (chopped)
3 green chilly (slit)
2 tbsp Coriander powder
1 ½ tsp Cummins powder
2 tbsp Bafat Powder ( or 2 tsp chilly powder)
2 tsp Garam Masala Powder
1 ½ cup Coconut (grated)
I Cup Coriander leaves (chopped)
Salt to taste
Method:
Step 1: marinate chicken with ginger garlic paste, turmeric powder and Lime 2-3 hrs before cooking.
Step 2: Melt the ghee in a deep vessel (wok) add curry leaves and fry onions till golden brown. Add Tomatoes and chillies.
Step 3: Once the above mixture is fried, add coriander powder, cumin powder, bafat powder, salt & garam masala powder. Fry it well for not more than 2 – 3 mins.
Step 4: Add the marinated chicken and cook till chicken gets tender.
Step 5: Once the chicken is tender, add coriander leaves.
Step 6: Take a frying pan, melt 1 tsp of Ghee and fry the grated coconut till its light golden brown.
Step 7: Add the fried coconut to the chicken and mix it well. Serve it with Rice and Dal

Chicken Tikka
Ingredients:
4 large Tomatoes (Sliced)
2 large Onions (Sliced)
3 large capsicums (Sliced)
Marinating:
1 ½ kg Chicken (diced)
1 cup curd
½ cup cream
1 ¼ tsp ginger garlic paste
1 ¼ tsp green chilly paste
1 tsp garam masala powder
2 tsp cashew paste
1 tsp kasoori methi
Orange – red Colour
Salt to taste
Method:
Step 1: Beat the curd, cream, ginger garlic paste, green chilly paste, cashew paste, kasoori methi, orange – red color and garam masala powder with a blender.
Step 2: Apply it to the chicken pieces and marinate overnight
Step 3: Arrange the chicken pieces, onion, capsicum & tomato slices alternately onto skewers.
Step 4: Grill till done
Indonesian Mutton Curry
Ingredients:
1 kg Boneless Mutton
1 cup Oil
6 Red Chillies
1 ½ cup thick Coconut Milk
3 sprig Curry Leaves
Marinating:
2 Large Onions (chopped)
2.5 cm Ginger (grated)
2 tbsp Coriander powder
1 tsp Cummin powder
Salt & Pepper to taste
Method:
Step 1: Marinate the Mutton the previous night
Step 2: Heat Oil in the heavy bottomed pan.
Step 3: Add red chillies & curry leaves, sauté for a minute or 2 till the chillies gives off a strong aroma.
Step 4: Put in the Marinated mutton and fry for about 10 mins.
Step 5: Add the coconut milk and cook on low heat till the mutton gets tender. (If the meat is tough you can add a cup of water)
Step 6: Cook till tender.
Step 7: Serve hot with steamed rice

Pork Bafat
Ingredients:
1 ½ Kg Pork (chopped)
8 big onions
4 green chillies
4 pods garlic
2 inches ginger
8 cloves
4 sticks cinnamon
4 bay leaves
8 – 10 black pepper corns
1 cup tamarind diluted
2 tbsp Bafat powder
½ tsp turmeric powder
Salt to taste
Method:
Step 1: wash the pork thoroughly and keep it aside.
Step 2: chop Onions, green chillies, garlic and ginger in cooker.
Step 3: Add cloves, cinnamon, bay leaves, black pepper corns
Step 4: Add tamarind diluted,
Step 5: Bafat powder, turmeric powder and salt.
Step 6: mix the above ingredients and smash well.
Step 7: Add chopped pork
Step 8: Mix well in the mixture
Step 9: Take 6- 8 whistles and serve it with Idlis or Rice

Spanish Eggs
Ingredients :
4 Eggs
2 tbsp Olive Oil
3 cloves Garlic (minced)
1 bunch celery (chopped)
2 Onions (chopped)
1 tomato (chopped)
1 capsicum (chopped)
1 tbsp Worcestershire sauce
3 tsp oregano
1 tsp chilly powder
Pinch of Pepper
Salt to taste
Method :
Step 1: Heat 1 tbsp oil in medium nonstick skillet. Add chili powder and sauté 1 minute.
Step 2: Add onion and celery; sauté until onion starts to turn golden.
Step 3: Add pepper and garlic and sauté until tender (onions will start to brown).
Step 4: Add tomatoes, oregano and Worcestershire, reduce heat and simmer until tomatoes turn into thick sauce, about 10 minutes.
Step 5: In separate nonstick skillet heat 1 tsp olive oil.
Step 6: When hot add eggs and fry, trying to keep a nice shape, just until the whites are set; they're meant to be 'sunny-side up'.
Step 7: Divide onion/pepper mix between two flattish soup plates. Put an egg on top of each, salt and pepper and serve.
Egg Tunamay
Ingredients:
6 – 8 Eggs
1 Cup Mayonnaise
1 tin Tuna fish
½ tsp Pepper Powder
Method:
Step 1 : Boil the eggs , peel them, cut them into Halves and remove the egg yolks and keep it aside
Step 2 : Mix the Tuna fish, pepper powder and mayonnaise and fill the egg white.
Step 3 : Once all the eggs are filled with the mixture grate the egg yolks all over Egg whites.

Pork Stir Fry
Ingredients:
½ kg Pork
2 cups vegetables (chopped broccoli, French beans, carrots, Asparagus,Bell peppers, Corn and onions)
1 tbsp olive oil
2 tsp soy sauce
1 tbsp black pepper
1 tsp Oregano
Salt to taste
Method :
Step 1: Boil pork till tender
Step 2 : Take a deep frying pan. Heat the oil
Step 3 : Fry vegetables and add boiled pork to it
Step 4 : Add soy sauce, oregano, Black pepper & salt.
Step 5 : Sauté till vegetables are tender.
